Check out this build. It's pretty much what you've been doing but it keeps you safe by putting out a few units to avoid early harass and then getting up a quick immortal and then observer to scout.

Seems to have more zealots than it should, which are just fodder(vs a kiting mmm) unless u get some great force field usage. I suppose it was all that could be afforded though due to high gas cost of sentry.
